For this week’s edition of Muffyn Mondays, I’m making Very Berry Muffins from Sally’s Baking Addiction! I’ve made quite a few recipes from her blog & loved every single one! I also follow her on instagram (@sallysbakeblog) to see new recipes & ideas that she shares.
Why I Love This Recipe
There are 2 cups of berries in this batter! That’s enough to make you feel like you’re eating something healthy. Also, there is only 1 cup of sugar. If you want your muffins to be sweeter, I suggest adding a little more sugar, as these muffins do not taste all that sweet. However, I like them to taste like I’m not eating dessert, so I like the sugar amount. Finally, this is very easy to make. On Sally’s blog, she uses a master recipe, but offers adaptations to create different types of muffins. I’m sure you will enjoy any of them!
A Couple of Things
The recipe says you can use fresh or frozen berries- I used frozen because it was easy to grab from the bag of berries I use for smoothies. The blackberries do take up a lot of room so maybe you could just use strawberries/blueberries/raspberries. Also, the 375° bake time calls for 25-26 minutes. I set the timer for 20, and had to take them out at 18:30. I think this is because our oven is new- I’ve noticed I have to shorten the bake time on several recipes just because it bakes so fast. So if you have a newer oven, perhaps shorten your time.
