I am SO excited to share these Veggie Chocolate Bites with you this week! These are brownies that bake as muffins, but they are gluten free and FULL off vegetables. My kids LOVED them & I know you will too!
My friend, Tiffany Spooner, sent this to me as a suggestion & I’m so thankful she did! (By the way, Tiffany is a local Atlanta nutritional consultant if you’re looking for some guidance and help. She’s wonderful!) The recipe is from The Healthy Maven blog, & they seem to have plenty of other healthy recipes also.
Why I Love This Recipe
First of all, these contain sweet potato, spinach, and coconut oil. Who doesn’t want to eat their veggies disguised as dessert? There is only 1/2 cup of coconut palm sugar (I subbed brown sugar), but the cocoa powder makes them extra chocolatey. Since I didn’t have fresh baby spinach on hand, I just used the frozen organic spinach I use for smoothies. It worked great! Finally, you can whip everything together in a food processor- easy!
These are very gooey, though perhaps you could bake them longer to stiffen. Have your kids (or you!) eat over a plate or napkin so you don’t have chocolate crumbs all over your floor (speaking from my mistake). I made the first batch just in the muffin tin, so it was slightly hard to get the muffins out. The second batch I made in muffin cups, so clean up is easier. These muffin cups are adorable to make baking easier!
