Happy Spring Break week! How many of you lucky people are at the beach? Wow, I sure wish I was one of them. Instead we had severe weather & tornado warnings today. All while I took all 3 kids to 3 stores to do my grocery shopping for the week. They were actually amazingly helpful, cheerful, and we were in & out in no time! I made sure to overly praise them for their behavior so maybe they’ll want to be like that always? Not sure if that will work…
Before we went out, I planned out our dinners for the week. I’m still trying to keep our food spending low(er), and this is one huge contributor. I thought some of you could use some inspiration for the week (especially if you’re stuck at home rather than being served in a tropical paradise), so I’m sharing our meals & recipes with you. Cuban Picadillo, yellow rice ($.99 box from Aldi’s), corn, & guacamole (avocados $.50 each at Sprouts)
Teriyaki Chicken (frozen box from Costco; $7.79 for 2 bags or 2 family meals), jasmine rice, swiss chard, cucumbers
Crock Pot Balsamic Pork Roast, roasted potatoes, broccoli
Spaghetti & salad
BLT sandwiches, chips, cucumbers
Leftovers or quesadillas if not enough left over
