The winter has finally come to Georgia. We had 78° days during Christmas, but now it is 33°. I’m snuggled up in my chair, desperately not wanting to go outside. Last night, I made a delicious, hearty, warming chili and wanted to share with you! Thanks so my sister for writing it in my cookbook 9 years ago when I got married!
1 – 1 1/2 lbs ground beef
1 large onion, chopped
2 cloves garlic, minced
2 (15 oz) cans dark red kidney beans
2 (15 oz) cans pinto/black/kidney beans (I use whatever I have in the pantry)
1 (28 oz) can diced tomatoes
1 (14 1/2 oz) can stewed tomatoes (again, use whatever you have if you don’t have stewed)
1 (10 oz) can Rotel
1/4 cup chili powder
1 tsp oregano
1/4 tsp red pepper (I leave out for the kids)
salt & pepper to taste
In a large heavy pot with lid, add a little olive oil & cook ground beef. Halfway through cooking, add onion & garlic. Once cooked, drain beef. Return to pot. Add undrained beans, tomatoes, rotel, and all spices. Bring to a boil, stirring so all is mixed. Lower to simmer & cover for 45 min – 1 hour.
While the chili is cooking, do 2 things:
- Make a small pot of rice to pour your chili over. Get out some cheese while you’re at it. Yum!
- Make the following Pecan Crescent Cookies.
We have some great friends in Florida. I have known the wife since I was in middle school & our families have been friends for years. We recently reconnected & have a fabulous time as couples.
They have visited us in GA a couple times, and we saw them in FL when we went to my college reunion. When we see them, we pick up where we left off, we laugh, talk seriously, ponder life & mission & purpose. We also talk poop & embarrassing stories, which always make their way into conversation?? Anyway, I always leave our time with them encouraged and better off. Recently, Jenny brought us these cookies & Evan loved them so much I had to make them again the next day. I’ve now made them twice and CANNOT STOP EATING THEM!!
The only thing I do differently than the recipe says is that I just roll them into a round ball, so they come out like a cookie. So, here you go:
Make the chili & cookies, and you will be a happy person. And oh so full. Just go to the gym tomorrow.
