This is one of our favorite dinners. It’s easy, lots of flavor, and fairly healthy. I first found this recipe years ago in the Favorite Recipes the Costco Way cookbook. After making this for a few years, I’ve adapted it so it has more sauce & I can cook the chicken right in the pot.
2 tablespoons olive oil
1 16 oz pkg bowtie pasta
2-3 large chicken breasts, cut into 1 inch chunks
8-10 asparagus spears, cut into 1 inch chunks & blanched
2 tablespoons chopped garlic
2 tablespoons chopped shallot
1 cup chopped tomato
1 14 1/2 oz can tomato sauce
1/2 cup grated Parmesan cheese, plus more for garnish
2 tablespoons fresh or 2 tsp dried basil
2 tsp fresh or dry Italian parsley (sub Italian seasoning if you don’t have just parsley)
1/2 tsp pepper
3 tablespoons unsalted butter
- Bring to a boil a medium pot of water; add pasta & cook until tender. Drain pasta, & set aside.
- In a medium pot, heat 2 tablespoons olive oil over med-high heat. Add chicken, shallot, & garlic. Let chicken cook most of the way through, then add asparagus & stir. Add chopped tomato, tomato sauce, Parmesan cheese, 2 tbs basil, 2 tsp parsley, pepper, & pinch of salt. Stir. Reduce heat to low & simmer for 10-15 min.
- Add drained pasta to the pot & stir to combine. Add butter & stir until melted.
- Once plated, garnish with additional cheese, basil & parsley if desired.
Note: Sometimes, if asparagus is too expensive, but I want to make this dish, I sub in spinach. It still has nearly the same flavor, & the kids still like it. Plus, you get some great greens!
