This week for Muffyn Mondays, I made some delicious Banana Chocolate Chip Muffins from My Kitchen Escapades! My kids love the banana & chocolate chip combination & it’s a great after-school treat without too much sugar. We made them one day & they were gone the next- definitely a favorite!
Why I Love This Recipe
The ingredients list is very basic items that you are likely to have on hand & don’t have to add to your grocery list. This is a good way to use up overripe bananas. Finally, this is simple to make, so little helpers can participate.
Kitchen Aid Mixer
I used my Kitchen Aid Stand Mixer to mix together the wet ingredients. When mixing a stick of softened butter with anything, it’s always easier to use an electric mixer. Once we added the dry ingredients, I didn’t want to over-mix, so I blended everything by hand. I’ve only had this beauty for just over a year now; thanks to my hubby for the thoughtful Christmas gift. Ours is from Costco, but you can find similar on Amazon. It does everything- whip potatoes, knead dough, mix cake batter, etc. Basically, works magic & looks pretty on your counter;).
